hummmm For a good dough for four pizzas:

500 to 600 gl of water (depends on the flour you use)
1 kg of flour of durum wheat flour (you can put 50% flour, 00 and 50% wheat flour)
10 g of fresh yeast (3.5 g of the dry)
25 g of salt.

Take two bowls where you put half the flour in each.
Divide into two bowls also dissolve in water where a salt and in the yeast, pour the water obtained one for each bowl of flour.

Mix each on its own until two compounds consisting
then add them

and mix them together and continue to knead until will result 'smooth, velvety and moist correctly.
Put flour in a bowl
Cover with a towel and close in a plastic bag
Let rise for at least 3 hours or until it has become twice
Now and ready to be divided, to prepare and bake pizza.
